Cutting edges such as knives and saws all work on the basic principle of concentrating the available force on a narrow area of material in order to cause it to separate. Extremely soft materials, such as biscuit dough, can often be divided simply by applying pressure by means of a metal blade. But most other materials, including solids, fabrics, and other foodstuffs, require carefully designed cutting edges for effective and efficient cutting.
Serrated knives are one of the most common types of custom machine knife. Serrations are tiny teeth at regular intervals along the cutting edge of the blade. The force on the blade is concentrated on the tip of each tooth, making serrated knives a highly efficient cutting solution in many cases.
From large, pronounced teeth like a handsaw, to very fine serrations, there are a wide range of profiles available for various applications. Serrated machine knives are often used when cutting fibrous material as such a surface tends to break away in small chunks. The movement of the teeth carries away these fragments and prevents the blade from getting stuck. Similarly, serrated knives are effective when cutting certain gauges of packaging plastic under tension as such a material can tend to adhere to a straight edge, clogging up the process. For example, vertical form fill sealing machines, common in the food packaging industry, rely on high-performance serrated machine knives.
